1kg Chicken wings
4 tsp cumin
2 tsp ground cumin
3 tsp cumin and corriander powder
1.5 tsp whole black peppercorns
8 whole green cardamon pods, split
3 green chillis, finely chopped (depends on spiciness of chillis. I usually use the ones available at a supermarket)
6 garlic cloves, crushed or diced
thumb sized piece of ginger, grated
2.5 tsp salt
3 tsp garam masala
1 tbsp oil
1 tbsp tomato puree
Preheat oven to 200°C
Put all the ingredients into a baking dish and rub into the chicken
Marinate (ideally overnight). This step is not essential, but will make the dish more flavourful
Bake in the oven for 25 minutes
Flip chicken over and cover the baking dish. Cook for another 20 minutes
Notes:
If you don't want to use an oven, follow steps 1-3 and cook the chicken in a pan instead. The texture will not be as good, but will still taste nice.
